Mmmm…cheese fondues, also known as holy-moly, creamy, melty, cozy, winter comfort in a pot.
Fondue is a fun and informal way to gather friends and family together. Given the recent temperatures in Alberta we thought we should share this great “go-to” recipe and some tips on how make a fabulous cheese fondue.
How to Make the Perfect Cheese Fondue
1 cup of dry white wine (dry wine is important)
1/2 lb of Swiss cheese (grated or cubed)
1/2 lb of Gruyere cheese (grated or cubed)
2 Tablespoons of flour (or gluten free constarch)
1/4 teaspoon salt
1/4 teaspoon nutmeg
In a large stock pot, over medium heat, bring wine to a slow simmer
Add your flour or constarch and mix well until blended
Reduce heat to low
Add your cheese gradually, stirring slowly after each addition
Do not let the cheese boil
Transfer your cheese mixture to your fondue pot
Serve with cubed French bread, cut vegetables such as broccoli or cauliflower or apple and pear slices. Enjoy!
Hint: If your cheese turns lumpy add a few drops of lemon juice. The acid in the lemon juice will help break down the stringiness of the cheese.
